Blue grenadier – also known as hoki – live in the waters off southern Australia, from New South Wales to Western Australia, including around the coast of Tasmania. They live up to 25 years, reaching a maximum size of around 110cm in length and 6kg in weight.

Blue grenadier are bottom-dwelling deepwater fish, caught mainly by trawling. The fishery is one of Australia's most commercially important. The fish is sold as fresh fillets, but is also used in many processed fish products, including McDonald’s Filet-O-Fish burgers in Australia.

Fish stocks are well managed, and the fishery is implementing measures to reduce the number of seal deaths.
